These keto refrigerator pickles, which are also called quickles, are a tasty and sour snack that is great for people on the ketogenic diet. They don't need to be cooked or canned, so they're quick and easy to make.
Ingredients: 4 medium cucumbers, thinly sliced. 1 cup apple cider vinegar. 1 cup water. 2 tablespoons Swerve or preferred keto-friendly sweetener. 2 cloves garlic, minced. 1 teaspoon salt. 1 teaspoon mustard seeds. 1/2 teaspoon black peppercorns. 1/2 teaspoon red pepper flakes optional.
Instructions: Put apple cider vinegar, water, sugar, garlic, salt, mustard seeds, peppercorns, and red pepper flakes if using in a small saucepan. Bring the mix to a boil, then lower the heat and let it cook for 5 minutes. Take it off the heat and let it cool down to room temperature. In a clean glass jar or container, put the cucumber slices that have been cut very thin. Make sure the cucumbers are completely covered when you pour the cooled vinegar mixture over them. Put the lid on the jar or container and put it in the fridge for at least 24 hours before serving. You can eat your keto refrigerator pickles as a snack or add them to salads.
