A quick and easy Instant Pot version of the classic Pasta Putanesca with a smoky twist. The savory combination of anchovies, olives, and capers melds together with a hint of smokiness from paprika, creating a delicious and satisfying dish.
Ingredients: 1 lb penne pasta. 1 can 28 oz crushed tomatoes. 1/2 cup Kalamata olives, sliced. 1/4 cup capers. 3 cloves garlic, minced. 2 tbsp olive oil. 2 tsp anchovy paste. 1 tsp red pepper flakes. 1 tsp smoked paprika. 1/2 cup fresh parsley, chopped. Salt and black pepper to taste. Grated Parmesan cheese for garnish.
Instructions: Put the Instant Pot in saut mode and heat the olive oil. Cut up some garlic, add some anchovy paste, and some red pepper flakes. Saut for one to two minutes. Add the smoked paprika, crushed tomatoes, olives, and capers, and mix them in. Close the lid, turn off saut mode, and set the Instant Pot to high pressure for 5 minutes. Release the pressure by hand when the food is done cooking. While the pasta sauce is cooking, follow the directions on the package to boil the penne pasta. Toss the cooked pasta with the sauce that has been made in the Instant Pot. To taste, add salt and black pepper. Add chopped parsley and grated Parmesan cheese on top and serve hot.
