I just got back to #beaconny from Minneapolis, but when I was there I had one of the top 5 meals of my entire life (and I’ve had a lot of great meals!) It was at @spoonandstable, a restaurant by @gavinkaysen , who won the 2018 James Beard Award from @beardfoundation for Best Chef. These are just some of the highlights: pork schnitzel topped with deviled eggs, cream spinach topped with fried cheese curds, eggs Benedict topped with smoked duck leg. All in all it was basically a health food meal — and you should GO if you ever find yourself in the Twin Cities. I haven’t gotten to do much eating in Beacon lately since I’ve been all over the place, but one of the things that took me away was an unforgettable dinner party this past weekend at @king.newyork for the 30th birthday celebration of a dear friend. (👋🏼 @meredith_marie!) I know it’s not in the Hudson Valley, but if you ever find yourself down in the city looking for an incredible meal, check out King (on King Street in SoHo). Not only is the food to die for, but it’s owned and run by 3 women 💪🏼👸🏼, (one of whom is a fellow Yale grad from around my time), which is even more reason to go support it. It’s hard to overstate how delicious their food is, and the menu changes every night, but here was one of the courses and best dishes I’ve ever had: ravioli with ricotta and chanterelles in a thyme butter with parmesan. (Some version of the dish is often on the menu). My mouth is still watering thinking about it, and the photos don’t even remotely do it justice. Isn’t it amazing how some foods fill you up with so much clean energy? I had eaten half a bagel with veggie Tofutti for breakfast and just wasn’t feeling it. The taste was meh. I felt heavy and kinda gross after eating it. This bowl did the opposite! It was delicious and tasty and filling and I felt good after eating it. Beet and zucchini noodles, sweet potatoes, cabbage, quinoa, red pepper, spinach, pickled onions, and a tahini dressing. The beet noodles, pickled onions, and tahini dressing were my favorite part! The tastes contrasted yet complemented each other so well. Yesterday makes exactly one year in Beacon for me! (I know, I know, I’m super #newbeacon). I thought I’d share the first food photo I took as a resident, just an hour after getting our keys and getting into our house: Chicken tenders and mashed potatoes from @kennedyfried chicken on Main Street, orange soda and wavy lays from the convenience store next door (does that store have a name??). Total health food meal. Thanks to Beacon for being such a warm and welcoming place- and also a delicious one! #Beacon is a great spot for a picnic - even one indoors. Some friends who recently moved to Carmel came over for lunch the other day, and we ended up with a collection of delicacies from @beaconnatural and @beaconpantry.
