A silky and flavorful soup made with wholesome edamame, perfect for a comforting and nutritious meal.
Ingredients: 1 teaspoon olive oil. 1 small onion, chopped. 2 garlic cloves, minced. 16 oz frozen shelled edamame. 4 cups reduced-sodium chicken or vegetable broth. 1/4 cup chopped fresh cilantro. 1 tablespoon fresh lime juice. 1/4 teaspoon kosher salt, or more to taste. 1/8 teaspoon freshly ground black pepper, or more to taste.
Instructions: Set the olive oil in a big pot over medium-low heat. Stir the onion and garlic in for about 4 minutes, or until they are soft. Bring the broth and edamame to a boil. Turn down the heat and let it simmer for 10 minutes with the lid on. Take it off the heat and let it cool down a bit. Blend the soup until it's smooth with an immersion blender. Add the lime juice, salt, and pepper, along with the cilantro. Check the seasoning and make changes if needed. If you need to, gently reheat before serving.
