I learned to cook by purchasing vegetables that I did not know what they were. Watching it age and start to look sad in the refrigerator would push me to "rescue" it from such a depressing death. I would search high and low for complicated recipes. How does it pair with what spices? Can I serve it with broccoli? Broccoli is safe. . What I have learned is.. . 1.Every vegetable can be baked, sauteed, boiled, and/or steamed. . 2. Everything works well when cut into 1" by 1" chunks. . 3. You don't need complicated recipes. All veggies taste great, and go well with all other veggies. . 4. Oil, Salt, maybe pepper. Start there. Onions, garlic, ginger are step two. . 5. Sure some are more complicated, like leeks, artichokes, and jack fruit. But for the most part, wash, chop, cook, serve. BOOM. . My eyes still light up when i spot something that I don't know what it is!! These Japanese Yams are amazing. The flesh is kind of green, creamy, and has a walnut and almond kind of sweetness. Kind of reminds me of Eddoe, a root i found in South America. When I looked it up they say it is low in carbs, high in fiber, a the Japanese have stories of preventing aging. Either way.
