Recipe.
12 eggs
1 red bell pepper, cut into small squares
1 small sweet onion, diced
1 shallot, diced
4 oz spinach
3-4 cloves garlic, diced
Rosemary 2-3 teaspoons
Ground ginger 2-3 teaspoons
Nutmeg 1/4 teaspoon
Salt 1/2 teaspoon
Sauté Spinach and then sauté the pepper, onion, shallot, garlic, and spices.
Preheat the oven to 350 Fahrenheit.
Beat the 12 eggs then mix them with the sautéed spinach and pepper onion mix.
Add them to a 12 count muffin tin.
Put muffin tin in oven for 20-25 minutes
Cook up any left over egg mixture to eat while you wait.
Egg muffins are done when a toothpick comes out clean.
