Zucchini cake
Okay I decided to put my Zucchini cake recipe, which I originally shared in a reblog on @suspicioustoads ' egg Problem post, down as an Independent Post, because that's easier/more appropriate for when I want to Link to it later in a different context.
Here's the recipe, which, in my experience, makes enough for two people's breakfast (re-toasted, plain) and then 4-6 people's coffeetime-pastry-snack (with icing/frosting/whipped-cream). I originally "invented" it in 2023 (two years ago) after gathering Zucchini cake recipes from multiple different recipe Blogs and modifying them into Something less-overly-sweet, less-egg-heavy, more slob-friendly.
3 Cups of flour, ideally two Cups of whole-wheat and one Cup of White
1 Cup of sugar
pinch of Salt
Half a teaspoon of baking powder
however much ground cinnamon, ground Vanilla pods, other sweet-compatible spices, and/or unsweetened cocoa powder feels right
mix all the dry together
2 Cups of grated Zucchini
1 Cup of oil (Coconut, or sunflower seed)
4 eggs
mix the wet with the dry with a large spoon or ladle, No whisk, it's supposed to be a thick heavy batter.
If it's TOO dry, you can add a fifth egg (I Usually don't, I use only three eggs and a mashed banana to begin with, and some more Zucchini if it gets too dry, but If my Goal was to use Up as many eggs as possible, I probably would) (also you can add banana even i you're using "enough" eggs, especially If you have a very ripe one lying around, it's nice but very optional. Adds a specific Kind of sweetness, but the cake tends to spoil faster than without banana)
Fill your cake moulds/loaf pans/muffin cups to three quarters of their height, and Bake on 180°C for however long is appropriate for the size.
