Oven roasted potatoes with ketchup, and the double decker fried balogna and cheese Sammie on top, eggs and liver pate on the bottom.

The only downside is there's no black pepper in the house.

Double egg super patty fried bologna and pate breakfast sandwich

We start with our toast. One mustard, one chipotle aioli (with margarine on the bottom) and pate on the bottom toast.

Fry up ya bologna, first slice hits the mustard toast, then a slice of cheese, then two more bologna slices to melt the cheese. Some people like putting the cheese on the mustard, nah I found I want meat-mustard contact and the cheese can fit in the slices better.

After the meat's fried and the top half assembled, stack two silicone egg rings. You need two cause 2 eggs will fill one ring to the top, and you need room for a thin spatula to fit into the scramble without it overflowing. Black pepper and cayenne into the eggs before you pour, just a dash of water to make them fluffy.

Took off the top ring a bit early, some overflowed but most stayed in. Now as you see the curds start to set you sprinkle in the salt. I put the second egg ring back on to keep the scramble moving while the egg patty became solid.

Unflipped double egg patty, sans egg rings. Let's flip it to finish it off.

It doesn't need long to cook once flipped, less than a minute I find. You can throw more salt and pepper on at this stage, but I'm experimenting with technique so I didn't season the second side.

Look how big that boy is, real substantial and on top of liver pate it'll be meaty. A real compliment to the balogna and cheese. Pate is a great meaty replacement for cheese, but with a double decker you can fit both and it doesn't seem too greasy.

Didn't get a picture of the whole thing assembled but I completely demolished it. Gonna try this technique again!

Here we have 2 egg patties near perfectly formed. Black pepper ⚫ and cayenne 🔴 with a splash of water, scrambled in a small cup. Poured into a silicone egg ring in a 🧈 buttered pan 🍳. Move the curds around 🧑‍🍳 until they leave a trail like parting the red sea, then salt em (salt eggs in the pan not before).

🌶️ Jalapeno cream cheese 🥯 on a toasted bun, mustard 〽️ on the bacon 🥓 side. Yeah, should have taken more shots on the egg cooking process not just the finished results I will remember next time.
