One time I decided to try to make pickled quail eggs….. First off, I didn’t even know if I liked regular pickled eggs. But my brother in law’s aunt had a TON of quail eggs she was giving away….
Here they are, 90 something of them. I think quail eggs are so dang pretty.
Had to boil them and then peel them. At this point I was mildly questioning my decisions. What possessed me to want to peel NINETY tiny eggs!?!?
I also had to make a brine. Brine is basically one part vinegar and two parts water (I think, don’t quote me because I could be wrong) and whatever flavor or seasonings you want your eggs to taste like. I went for a Cajun style and I used a recipe I found online that I have since lost. I only kind of followed it though.
Then I peeled a lot of raw garlic to pack into the jars with the eggs. . I didn’t cook the garlic because I wanted it to retain its crunch. Again, questioning my decisions on the peeling of lots of tiny things.
I then stuffed my jars with my eggs, garlic, and a few pickled peppers I had. Unfortunately I only took the one picture of the stuffing in progress but look how cute those teeny eggs are.
Here’s the final product. (Yes I re used old jars) Overall these turned out okay but they really didn’t pack that Cajun punch I was looking for. I think I should have used more seasoning in the brine or maybe I could have boiled the eggs in seasoned water to help the flavor🤷🏻♀️. I do wish I had used a LOT more garlic though because the garlic was *chefs kiss* and I ate it way too fast.

I made pickles! And forgot to take a picture until after doing some taste testing. Whoops! Anyway, they're yummy. I'm proud of me.

Lamb burger
Whole wheat bun, chipotle aioli on the top and bottom, slices of pickles, red onion, lettuce and a lamb burger patty with chipotle beer barbecue sauce. Mustard on the top to finish it off.
Double egg super patty fried bologna and pate breakfast sandwich
We start with our toast. One mustard, one chipotle aioli (with margarine on the bottom) and pate on the bottom toast.
Fry up ya bologna, first slice hits the mustard toast, then a slice of cheese, then two more bologna slices to melt the cheese. Some people like putting the cheese on the mustard, nah I found I want meat-mustard contact and the cheese can fit in the slices better.
After the meat's fried and the top half assembled, stack two silicone egg rings. You need two cause 2 eggs will fill one ring to the top, and you need room for a thin spatula to fit into the scramble without it overflowing. Black pepper and cayenne into the eggs before you pour, just a dash of water to make them fluffy.
