Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 1/2 cup all-purpose flour. 2 large eggs, beaten. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. 4 tablespoons unsalted butter. 1/2 cup chicken broth. 1/4 cup fresh lemon juice. 2 tablespoons capers. 2 tablespoons chopped fresh parsley.
Instructions: Add salt and pepper to the chicken breasts. Coat the chicken in flour, then dip it in eggs that have been beaten with Parmesan cheese. In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat. It will take about 34 minutes per side for the chicken breasts to turn golden brown and be fully cooked. Take the chicken out of the pan and set it aside. Add chicken broth and lemon juice to the same pan, making sure to scrape up any browned bits. Mix in the capers and the rest of the butter. For about two minutes, cook until the sauce gets a little thicker. Put the chicken back in the pan and cook for two more minutes, until it's fully heated through. Put chicken on a plate and cover it with sauce. Add chopped parsley on top.
