A tasty change from the usual deviled eggs are green deviled eggs. By adding fresh spinach and chives, you not only make the dish look beautiful, but it also tastes fresh and herbaceous. As a starter or party snack, they're great.
Ingredients: 6 hard-boiled eggs. 2 tablespoons mayonnaise. 2 teaspoons Dijon mustard. 1 teaspoon white vinegar. 1/4 cup finely chopped fresh spinach. 1 tablespoon chopped fresh chives. Salt and pepper to taste. Paprika for garnish.
Instructions: Peel the hard-boiled eggs and cut them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, and white vinegar to the yolks. Mash and mix until smooth. Stir in the finely chopped spinach and chopped chives into the yolk mixture. Season with salt and pepper to taste. Adjust the seasonings as needed. Spoon the green yolk mixture back into the egg white halves or use a piping bag for a decorative touch. Sprinkle paprika on top for garnish. Chill the green deviled eggs in the refrigerator for at least 30 minutes before serving. Serve chilled and enjoy!
