These Guacamole Deviled Eggs are a tasty and healthy take on the classic dish. They are a popular starter because they have creamy avocado, tangy lime, and a little heat from jalapeo.
Ingredients: 6 hard-boiled eggs, peeled and halved. 2 ripe avocados. 1 small red onion, finely chopped. 1 jalapeo pepper, seeded and finely chopped. 2 cloves garlic, minced. 2 tablespoons fresh cilantro, chopped. Juice of 1 lime. Salt and pepper to taste. Cherry tomatoes and extra cilantro for garnish.
Instructions: Scoop out the yolks from the hard-boiled eggs and place them in a bowl. In a separate bowl, mash the ripe avocados until smooth. Add the finely chopped red onion, jalapeo pepper, minced garlic, chopped cilantro, and lime juice to the mashed avocados. Mix well. Season the guacamole mixture with salt and pepper to taste. Fill the hollowed egg whites with the guacamole mixture, either using a spoon or a piping bag for a neater presentation. Garnish each guacamole deviled egg with a cherry tomato half and a cilantro leaf. Serve chilled and enjoy!
