Ingredients: 4 plain chicken burger patties. 4 large eggs. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon fresh lemon juice. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 4 hamburger buns. 4 lettuce leaves. 4 tomato slices. 4 slices of cheese optional. Butter or oil for cooking eggs. Additional toppings of your choice e.g., onions, pickles.
Instructions: Heat a skillet or grill pan over medium-high heat and cook the chicken burger patties until fully cooked, about 5-7 minutes per side. If using cheese, add a slice to each patty during the last minute of cooking to melt. While the chicken patties are cooking, prepare the scrambled eggs. In a bowl, whisk the eggs until well beaten. Heat a separate skillet over medium-low heat and add butter or oil. Pour the beaten eggs into the skillet and gently scramble until they are cooked to your desired consistency. Remove from heat. In a small bowl, mix together mayonnaise, Dijon mustard, fresh lemon juice, salt, and black pepper to create the salad dressing. Toast the hamburger buns on the grill or in a toaster until lightly browned.
