Ingredients: 4 slices of bacon, chopped. 1 medium sweet potato, peeled and diced. 1 pound Brussels sprouts, trimmed and halved. 1 small onion, chopped. 2 cloves garlic, minced. Salt and pepper to taste. 1/2 teaspoon paprika. 1/4 cup chicken or vegetable broth. 2 tablespoons olive oil.
Instructions: Heat a large skillet over medium-high heat and add the chopped bacon. Cook until crispy, then remove and drain on paper towels. Set aside. In the same skillet, add 2 tablespoons of olive oil and heat over medium heat. Add the diced sweet potato and cook for about 5-7 minutes, or until they start to soften and turn golden brown. Add the chopped onion and minced garlic to the skillet. Saut for another 2-3 minutes until the onion becomes translucent. Stir in the halved Brussels sprouts and cook for about 5 minutes, or until they begin to caramelize and become tender. Season the mixture with salt, pepper, and paprika.
