A delicious and nutritious Paleo breakfast prepared in an Instant Pot, featuring a variety of flavors and textures with eggs, veggies, and bacon.
Ingredients: 6 large eggs. 1/2 cup diced bell peppers. 1/2 cup diced onions. 1/2 cup diced tomatoes. 1/4 cup chopped spinach. 1/4 cup diced cooked bacon. 1/4 cup coconut milk. 1 tsp coconut oil. Salt and pepper to taste.
Instructions: Turn on the Instant Pot and select the 'Saute' function. Add the coconut oil and let it melt. Add the diced onions and bell peppers to the Instant Pot and saut for 2-3 minutes until they become slightly soft. In a bowl, whisk the eggs with coconut milk and season with salt and pepper. Pour the egg mixture into the Instant Pot and stir gently. Add diced tomatoes, chopped spinach, and diced cooked bacon on top of the eggs. Close the Instant Pot with the lid, and set it to 'Manual' for 5 minutes at high pressure. Once the cooking cycle is complete, perform a quick pressure release.
