Letter 2: I learned how to cook your favorite soup
Dear mon petit printemps
One more day your heart and mine beat in the same rhythm. One more day I long for your presence in my embrace
Today I miss the taste of tomato tofu soup that you once gave me, you know it tastes heavenly. Its warmness felt like a motherly embrace in that cruel winter when I was surviving with an empty stomach for two days.
Today, I learned how to cook tomato tofu soup, our favorite food. Before cooking, I had to buy the ingredients, thanks Miss May for giving me the recipe; she's a lovely lady who brought me up like her own son, one day I'll introduce you to her.
The summer market was full of life, they was preparing for the festival where people have to bring their handmade cakes as a ticket to enter. I joined it a couple of times with Kai and the boy when we didn't carry much responsibilities on our shoulder, still young and foolish. Two years ago, we tried to bake a chocolate strawberry cake but failed terribly as we forgot to take it out the oven in the right time so we ended up in the Hungry and Poor inn instead of the summer festival.
I had bought tomatoes, white beech mushrooms, tofu and eggs but I forgot to buy corn starch, thankfully the lady sold me vegetable kindly reminded of it so I didn't miss any important ingredients. People in the market are so friendly and fun to talk with, then I know how you loved being with them.
Cooking time, after washing the ingredients, I placed the tomatoes in boiling water before peeling their skin off. Then, I cut the tomatoes, tofu and spring onions into small pieces while cracking two eggs into a bowl. Later, I sauteed the tomatoes until fragrant. Adding a little salt and sugar, kept cooking until tomato juice coming out. Then I added water, tofu, mushrooms, corn stack water, soy sauce and finally mixed eggs, stirred the mixing. The soup was done. I'm so proud <3
I ate it all on my own since I was away from them, but the soup was good, not as delicious as you did, i must admit:)))
Today is a sunny day.

Simple and Delicious Tomato Egg Drop Soup Recipe
Tomato Egg Drop Soup
Chinese households frequently have bowls of tomato egg drop soup on the tables, particularly during the summer when tomatoes are in season.
Several culinary traditions are aware of the natural pairing of tomatoes and eggs. Consider the Middle Eastern dish Shakshuka, the Southern Italian dish “Eggs in Purgatory,” and another traditional Chinese dish, stir-fried tomato, and eggs.
If preparing soup in the midst of the summer makes you uncomfortable, keep reading!
A staple of the summer is tomato egg soup:
For many people, eating soup in the heat is absurd. But if you allow me to take you back to the numerous sweltering summers I lived in Shanghai, you’ll discover why people back then actually did it.
Shanghai’s summers can get quite warm and muggy. Prior to the invention of air conditioning, splurging on a red bean ice pop, a palm fan, cold mung bean soup (there’s that word “soup” again), a cup of cold water, or some melon would have been the only way to escape the heat.
There was not a leaf or blade of grass to be found in the tiny passageways of the low, heavily crowded apartment complexes. By the end of the day, it was much cooler outside than inside, so we had to sprinkle water on the building walls to cool them down.
The majority of families dined al fresco, and some kids even spent the night on homemade beds. At the dinner table, each of us had a different soup, such as the most popular tomato egg drop soup, tomato potato soup, or potato with xian cai (Chinese preserved mustard greens). For lunch and dinner, soups are typically made in the late morning and allowed to cool.
These soups restored our bodies with water, salt, vitamins, and protein. It was also simpler to eat because of the heat.
HOT OR ROOM TEMPERATURE SERVICE:
In the past, this soup was served at room temperature rather than piping hot when we ate it.
Thus, feel free to serve this soup at whichever temperature you choose. I’ll serve it warm or hot now that I can sit in the air conditioning comfort. a side dish for any dinner.
This recipe couldn’t be more straightforward, but the flavors are incredibly good. The eggs in the chicken stock produce a rich flavor that the acidic tomatoes contrast with. The soup is the ideal side dish for any meal and may be brightened up with scallions and cilantro.
INGREDIENT
Oil, 2 tablespoons
10 tomatoes, 10 ounces (1 large or 2 small, cut into small chunks)
1 cup of poultry stock
2-cups of water (or more chicken stock)
Light soy sauce, 2 tablespoons
50 ml of sesame oil
1 egg (beaten) (beaten)
2 tablespoons/30-milliliter water and 1 1/2 teaspoons cornstarch
1 scalene (finely chopped)
1 teaspoon of cilantro (chopped, optional)
Instructions for the recipe for tomato-egg soup:
In a soup pot or wok, warm 2 tablespoons of oil over low heat. After adding the tomato chunks, stir-fry for 5 minutes, or until the tomatoes soften and begin to crumble.
1 cup chicken stock, 2 cups water, 1/2 teaspoon sesame oil, 2 teaspoons light soy sauce, 1/4 teaspoon ground white pepper, and salt to taste should all be added.
As the soup begins to boil, turn down the heat so that it is simmering with the lid on.
In a separate bowl, make the cornstarch slurry and immediately beat the egg in a small bowl.
Stir the soup using a ladle as you slowly stir. As you pour the cornstarch slurry in, continue to swirl until it is thoroughly combined.
When you carefully swirl the soup, pour a thin stream of egg into the center of the whirlpool. You achieve the lovely egg drop look in this way.
Whether hot or cool, serve. Pour the soup into bowls and, if desired, top with chopped cilantro and scallions.
Tomato Egg Drop Soup is not only delicious, but it also provides a range of health benefits due to its ingredients:
Tomatoes are rich in antioxidants, particularly lycopene, which has been linked to a reduced risk of heart disease and cancer. Tomatoes are also high in vitamin C, potassium, and vitamin K, which are essential for maintaining healthy bones, blood pressure, and immune function.
Eggs are a great source of protein, which helps to build and repair tissues in the body. They also contain a range of vitamins and minerals, including vitamin B12, vitamin D, and selenium, which are important for maintaining good health.
The combination of tomatoes and eggs in this soup creates a nutrient-rich and satisfying meal. Additionally, the warm broth of the soup can help to soothe sore throats and clear congestion.
