Ingredients: 2 cups cooked black beans. 1 cup corn kernels. 1 cup diced tomatoes. 1 cup shredded cheese. 1/2 cup diced onions. 1/4 cup chopped cilantro. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. 8 small tortillas. Salsa and sour cream for serving.
Instructions: Preheat oven to 375F 190C. In a bowl, mix black beans, corn, tomatoes, cheese, onions, cilantro, cumin, chili powder, and garlic powder. Spoon the mixture onto tortillas, roll them up, and place them in a baking dish seam side down. Bake for 20 minutes or until enchiladas are heated through and cheese is melted. Serve with salsa and sour cream.
