After the wonderful morning of climbing, stretching, singing, and writing i decided to take a photo. One might ask (thought with no reason) WHY? Why this? Why that? Why NOT!? Thats really the question that should be asked.
Its a hard thing for anyone anyhow to be writing letters ANYHOW
From here to there, from there to here. One might say/scream/protest:
"This is NON-sensical" "Quit being so wasteful" "You should go back to school!!!"
BUT..letters i have been writing. To all...Sisters, Brothers, PA's, MA's. And i am thoroughly enjoying myself doing it.
Oh the insanity of it all. Living and breathing, and eating, and dying...all the time. It's overwhelming for a boy from Nebraska. Really, it is. I'm still really suffering from the cuts that are going to be made on some animals that live here on the MTN. I couldn't do it, cutting, dicing, slicing, all the blood/guts/organs staring at me, spraying me, staining my clothes a purplish-red. On the brightside of the day, WINCO had oranges 18 cents a pound.
OH, this topic is depressing me even further. The mere fact that i would get so excited about the pricing of produce shows one that truly i need a REVAMPING of sorts.
But when i start thinking about ALL OF THAT it gets my stomach hurting. I have found ONE, no TWO cures to that stomach ache. 1. Pedro The Lion, and 2. A firm grip on the spatula of TRUTH. Mixing up my MIND is found right BELOW THIS. Here is to the Broccoli King!
Sesame Broccoli Stir-Fry (Adapted from "Vegan Planet")
2 Tbs of Toasted Sesame Oil
3 Tbs of Tamari or Soy Sauce (I used Soy Sauce, Tamari is expensivo)
1/4 Cup Toasted Sesame Seeds (just toast them on the stovetop in a frying pan for a couple of minutes, well worth the extra time.)
1 Red Bell Pepper, cut into matchsticks
Cut broccoli into small florets and chop up stems. Steam broccoli with stems until barely tender (DON'T get over-zealous now.). about 3 minutes or so. Rinse under cold running water to set color and stop cooking process. Drain, set aside.
In a small bowl, combine sesame oil, tamari, hoisin sauce, and roasted sesame seeds.
Heat peanut oil in a wok or large skillet over med-high heat. When the oil is hot, add the bell pepper and garlic and stir-fry to soften slightly, about 1-2 minutes. Add the broccoli and sauce and stir-fry, coating veggies with sauce, until they are cooked how ya like em, about 3 minutes (atleast thats what i did). Serve HOT.
It's been EXTREMEly cold around here as of late. Here is to better times. We will (one day) enjoy the sunshine from the side of a mountain. We will swim a thousand lakes, and speak evil of the HARDEST TIMES that we have seen. BUT!!! they will get even HARDER. But not now. Not like this. And please...please wait for the snow to melt. THIS IS TO YOU SWEET NEBRASKA. You cold, windy, flat piece of land.
