Hi, I kidnapped(?) a giant African land snail for school stuff, and now I'm considering keeping it, but the messaging on snail keeping is so conflicting! Some people say to use coco peat substrate, others don't. I thought about setting up a terrarium of sorts but I don't have springtails or other critters like them to help balance out the terrarium. What kind of enclosure setup do you recommend?

I'm just gonna note here that I don't know a great deal about GALS, as they are illegal in Australia, so definitely continue your own research as well as what I say here. With that disclaimer out of the way;
Because snail keeping is fairly niche, conflicting or poor info is pretty common. Coco peat, or coir, used to be the most recommended substrate but as the snail keeping community has learned more, its generally agreed to try and avoid it when possible now. This is due mostly to it's high acidity, lack of minerals and normal soil microorganisms. The ideal substrate would be an organic topsoil or compost. I have a few posts about housing, this one, this one and this one might be helpful! You don't need a bioactive vivarium necessarily, but if you want one, sprintails are easy to find in the wild!
Now, for GALS specifically, supplemental heat will be required. Unfortunately I cant help much here, as no pet snails require heating here in Australia, but one really important thing i do know is to Never place a heat mat or cable on the underside of the terrarium. GALS will instinctively dig if they feel they are getting too hot, and if the heat source is under the terrarium they will just go closer to it and end up cooking themselves. Place the heat source on the side wall instead. My friends in the r/snails discord would be happy to help you out with GALS-specific care requirements and questions!
