OK - I'll admit I've only caught one sheepshead on fly and that was probably by accident since sheepshead are not easily fooled and are typically caught on bait such as crabs and shrimp. This is a great eating fish but tough to clean with large scales and thick bones. While sheepshead are found in the Everglades year round the really big ones (3-to 5-pounders) show up in Everglades during the winter months of late December, January and February. Best caught on shrimp or pieces of shrimp the fillets of this fish can be tied up in cheese cloth and boiled water seasoned with Zatarans crab boil and taste just like blue crab meat.
