It’s been more than 24 hours... and the cabbage is *GROSS*. Instructions recommend to leave it in until the bubbling starts.. but I think I’ll get the wrong type of bacteria in here if I leave it in.
8 hrs later: BUBBLES!
So! apparently I have to ‘feed’ this thing every 8 hours! That is more often than I fed my dog- or my birds- or my fish!
7:30am- wet, limp cabbage and no progress to show for it 3:00pm- AH! ‘hooch’- I’ve been warned to look for liquid floating on top. I’m supposed to stir it back in for the first 48 hours. Yes. It’s actually pink.
Got home and my apartment smelled like active yeast! Uncovered the bowl to feed the Thing...and... BUBBLES.. It was actually ‘fizzing’! Much excitement.
One more feeding puts me at 48 hrs. Then I have to partition it before I feed it again- which means... PANCAKES!
OOOoooooh Kay. So. I’ve never made bread before. EVER. Now that I’m Gluten-free, I can no longer afford to BUY bread.
Thus: (against @copperbadge‘s excellent advice ) I bring you the Great Gluten-free Sourdough Experiment.
-2 leaves of organic Red cabbage to provide yeast and the lactic acid bacteria -experimental blend of gluten-free flour (which doesn’t include the recommended sorghum because I don’t have any.)

If I ever own a restaurant (which I won't) my menu will have the weirdest, most delicious food combinations on it. Every dish will be something no one has ever tasted before. Right now I'm creating some more recipes. I'm thinking dessert pizza with bananas boiled in coconut milk and guava jelly, mozzarella cheese, doce de leite dizzle, topped with crushed candied walnuts. I'm also thinking about an omelette with gochujang (korean red chili paste) grilled lobster but not sure exactly what veggies should go into it.
Refreshing Oolong-Ginger Drink
Today I conducted an experiment and mixed two things I like: ginger beer and oolong tea.
The ginger beer I used was from a home-made batch. Here's the recipe:
-5 dl (2 1/2 cups) of water
-1 dl (1/2 cup) fresh ginger, chopped.
-1 tbsp ginger paste
-1 2/3 dl (roughly 1 cup) sweetener (sugar is fine, I used a lighter artificial sweetener)
- a bit of lemon juice
Boiled for something like 40 minutes, then strained the bits of ginger out and cooled the liquid. Mixed with carbonated water.
Be warned that the combination of ginger beer and oolong tea has a rather unusual taste. However, I personally found it very refreshing in the warm summer weather.
