Greek Lentil Soup, or Fakes, is a hearty and nutritious dish that's perfect for a cozy meal. Made with lentils, vegetables, and fragrant herbs, it's a comforting soup with Mediterranean flavors.
Ingredients: 1 cup dried lentils. 1 onion, chopped. 2 cloves garlic, minced. 1 carrot, diced. 1 celery stalk, diced. 1 tablespoon olive oil. 4 cups vegetable broth. 1 bay leaf. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Rinse the lentils thoroughly under cold water. In a large pot, heat olive oil over medium heat. Add onions, garlic, carrot, and celery. Saut until softened, about 5 minutes. Add lentils, vegetable broth, bay leaf, and dried oregano to the pot. Bring to a boil. Reduce heat to low, cover, and simmer for 30-40 minutes or until lentils are tender. Season with salt and pepper to taste. Remove bay leaf and discard. Serve hot, garnished with fresh parsley. Enjoy!
