Lentil Soup - Faki
This is a dump and go recipe using dried ingredients - perfect for the Instant Pot. It’s a very flavorful alternative to the traditional Faki Soupa, originating in Greece and Cyprus. The original recipe requires 10 minute sauté prep time and 60 minutes stovetop cook time. This Instant Pot version requires 8 minutes cook time under pressure and a natural release of 10 minutes. Build up to pressure takes about 18 minutes because of the amount of liquid. The herbs perfectly compliment the lentils and the peppercorns add a little unexpected burst of spicy flavor. So yum!
