These falafel waffles are a delightful twist on traditional falafel, combining the crispy texture of waffles with the savory flavors of chickpeas and Middle Eastern spices. The honey-harissa chickpeas add a touch of sweetness and heat, making this dish a flavorful and satisfying gluten-free and dairy-free meal.
Ingredients: 1 can chickpeas, drained and rinsed. 2 tablespoons honey. 1 teaspoon harissa paste. 1 cup gluten-free chickpea flour. 1 teaspoon baking powder. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup chopped fresh parsley. 1/4 cup chopped fresh cilantro. 2 cloves garlic, minced. 1/4 cup diced onion. 2 tablespoons olive oil, plus more for waffle iron.
Instructions: Follow the manufacturer's instructions for preheating the waffle iron. Honey and harissa paste should be mixed together in a small bowl. Put away. Put chickpeas, chickpea flour, baking powder, cumin, coriander, salt, pepper, parsley, cilantro, garlic, onion, and olive oil in a food processor. Blend the ingredients together until smooth. The mixture is done when it looks like coarse crumbs and sticks together when pressed. Oil the waffle iron a little. Spread the falafel batter out evenly on the iron by spooning it on. Close the iron and cook the falafel waffles for about 5 to 7 minutes, or until they are golden brown and crispy. Put honey-harissa chickpeas on top of hot falafel waffles to serve. Have fun!
