A warm and comforting bisque perfect for fall, made with sweet potato, pumpkin, and warming spices.
Ingredients: 1 large sweet potato, peeled and cubed. 1 can 15 oz pumpkin puree. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 can 13.5 oz coconut milk. 2 tbsp maple syrup. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. Salt and pepper, to taste.
Instructions: In a large pot, saut the onion and garlic until softened. Add the sweet potato, pumpkin puree, vegetable broth, coconut milk, maple syrup, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potato is tender. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Adjust seasoning as needed, then serve hot. Enjoy!
