Instructions: Preheat the oven to 250F. 120 degrees C. Over medium-high heat, pop the popcorn kernels in the vegetable oil, shaking the pan occasionally, until the popping slows. Distribute the popcorn evenly on a large baking sheet. Over medium heat, combine the butter, brown sugar, corn syrup, and salt in a saucepan. Cook, constantly stirring, until the mixture comes to a boil. Allow the mixture to boil for 5 minutes, stirring occasionally. Turn off the heat and stir in the baking soda. The solution will foam up. Stir the caramel into the popcorn to coat it. 30 minutes, stirring every 10 minutes, bake the popcorn. Allow the popcorn to cool after it has been removed from the oven. In a microwave-safe bowl, melt the chocolate chips for 30 seconds at a time, stirring after each interval, until melted. Drizzle over the cooled popcorn the melted chocolate. Allow 10 minutes for the chocolate to set before serving.
