Happy New Year’s eve, guys!👋👋🍾🎉 Here is what I’m having this morning right before anything else! After long yoga workout I’m having a heaping spoonful of fermented rice! I can taste a bit of alcohol and sweetness from of this dish. Do keep in mind that the longer you keep the rice out at room temperature, the more alcohol will develop in the dish. 🥰😋 Growing up I never used to like eating this dish, a fermented sweet rice. My mom used to make it for the grownups and maybe that’s the reason I never got used to it…only the grownups ate it! 😂 Actually, my husband really enjoys eating this dish, and every once in a while he will ask me to make it for him. Truthfully, this dish is great to have simply for the, “healthy gut.” It is a fermented sweet rice and just like kimchi, it provides another great alternatives to our microbiome or gut health. Adding the black sweet rice to the regular sweet rice will not only provide a nice purple dyed rice, but also provides a great boost of antioxidant as well!👍❤️ This dish is simple to make except, it takes time, and patience (well over a week) to make from beginning to end. All it needs are cooked sweet rice and Chinese yeast (white yeast balls). Crush the white yeast balls with a mortar and pesto to a fine powder. Sprinkle the powder to the cool down sweet rice and add a bit of drinking water to loosen the rice, breaking with your hands. Transfer to an airtight container and cover for up to 3-5 days at room temperature. Every day, make sure to check and stir the rice, until when you can smell a sweet and alcoholic aroma to the rice. Also, when you taste it should be sweet and a bit of alcohol in it, and it is done. Store it away in the fridge. The alcohol and sweetness will still continue to develop while in the fridge.
