It’s almost Christmas time and I am in the spirit of baking! I made these delicious sourdough cinnamon rolls for the family this morning. I made the dough last night and left it at room temperature to ferment. This morning I woke up early to bake them. The best part was waiting for everyone to wake up and smell the whole house filled with baked cinnamon rolls. Finally, to see each one of them devoured not just one but two and tell me how delicious it was. While weather here is -12 F, it’s another day of baking bread. My sourdough starter is at least 5 days old. Every morning/day I will feed the starter with a bit of flour and continue doing this on a daily basis. Happy Saturday!👋 It’s been awhile since I last shared a recipe! Today was certainly a busy day for me. However, I was able to make 3 types of crepes for the kiddos for the family, yummy!! For the savory crepe, i added Muenster cheese, eggs and pan grilled tomatoes and salt and pepper and a bit of extra virgin olive oil and making it my morning brunch!👍😋 Here’s the recipe for the homemade crepes and happy eating!! Ingredients 4 eggs, rm temp 1 1/3 cups milk, lukewarm 1/2 tsp kosher salt 2 Tbsp sugar 1/3 cup corn starch 3/4 cup AP flour 1/4 tsp vanilla extract 1. In a good blender all of the ingredients and blend until smooth, 5 minutes. Turn off and rest the batter for 20 minutes. 2. Preheat oven to 425 degrees F. Place a 10-inch nonstick pan in oven to heat, 10 minutes. Melt 4 Tbsp butter. Remove pan and grease the bottom and sides and pour 2 1/2 or 1.5 cups of batter to the hot pan. Place hit pan in the oven and bake for 1820 minutes, or golden brown. Remove from pan and place toppings on it . 3. Happy Easter, everyone!!✋✋ Today’s dish is one of my all time favorites, stuffed steamed cabbage rolls!😋 I used Chinese cabbage, which adds a sweetness flavor, and the outside soft. I don’t think a regular cabbage would have worked out this beautifully!😁 The fillings have a bit of ground pork, extra shrimp puréed, softened vermicelli bean thread noodles, shallots, carrots, celery, green onions, eggs, some shredded cabbage and seasonings. It is quite time consuming to make this dish because you have to put time in preparing and blanching 2 jumbo whole cabbages and then remove each layers of the leaves all the way down to the very center. But, I love making it every once in awhile, especially for a special occasion. Today, I’ve made it to share at church for our Easter potluck. When the weather is cold and dreary outside you make chicken noodle soup for dinner. These hand rolled noodles are made from tapioca and rice flour then cooked in chicken broth, a dish called Khao Piek. Traditionally, the hand rolled noodles are cooked in chicken broth and some chicken pieces. However, I added some Napa cabbage and tofu for extra fiber and veggies to complete a wholesome meal for the family. Because the noodles have tapioca starch and rice flour, the broth thicker which adds a nice body to the soup (similar to a thick and clear gravy broth). The noodles does have have a chewy and gummy texture to it, and has a good bite to the soup. This soup is meant to serve hot just like a chicken noodle soup! Many people add a wide variety of garnishes like finely chopped scallions, cilantro, lime juice, fried onions and garlic, fish sauce, and fried chili oils and even spicier if need be! But for me, I enjoy it more when it’s plain like this! Happy Wednesday! The best food to have when you are sick are light and soft foods like Chicken Noodles Soup, or Tomato Soup, or anything that’s softly cooked. However, although those soups are just as delicious, so is rice porridge or rice congee if you’re an Asian!😋👍 Making rice porridge or congee is simple and easy! I’ve made 1 cup of rice to 10 cups of purified water, and it’s 10 times the amount of cooked congee, which is more than plenty for the whole family! I cooked the rice and water, at a 1:10 ratio, in a heavy bottom pot, then bring to a boil over medium heat and then turn the heat to low and simmer for 45 minutes, and stirring occasionally. If you would like to add some diced vegetables to the dish now is the time to do so, that way it gets cooked properly. Now I added chicken breast and how I prepared that is easy. In a small pot, I place 3 cups of water and lemon grass for flavoring. Bring the water to a boil, and add in the thinly sliced chicken breast. Season with salt and pepper and cook for 5 minutes. Add the chicken broth but not the lemonades grass, and the meat to the porridge. Stir and ready to serve. Taste for seasoning and adjust as required. Happy Sunday everyone!👋 Today, I made a wonton noodle soup for lunch and it was delicious! 👌 Simplicity is key here! The broth took less than 1 hour to make, and simple too! First, in a stock pot pour in 15 quarts of filtered water. Add to it: 10-15 dried anchovies, 1 sheet of kelp, 1 whole yellow onion peeled and halves, 1 medium Chinese daikon, peeled and chopped to chunks, 3-4 celery sticks, 10-12 shiitake mushrooms halves, and some cilantro roots (optional). Bring the pot to boil and lower heat to simmer for 45 to 50 minutes, uncovered. Turn off heat and cool a bit. Strain the broth to a clean pot. Bring the broth to a boil and add in 3 TBSP Bonito powder, 3 Tbsp duck fat, 1/4 cup fish sauce, taste and adjust for extra seasoning. Broth is now ready to serve over noodles. I used both wonton noodles and egg noodles, but use what works for you. I also add in vegetable wonton dumplings which is from store bought. Vegetables are your choice! In a pot bring 5-6 quarts water to a boil. In a noodle basket/strainer, or you could drop the noodles directly in the pot, but use a spider strainer to ladle it out will work just fine. Cook the noodles for 30 seconds, if the noodles are fresh, and place them in a clean bowl. Cook the dumplings in the broth until they float. Ladle the broth over the noodles, addd in the dumplings and vegetables. You can cook the vegetables a bit in the hot water and strain before add them into the noodle bowl. At this point you can pretty much add in whatever suits your own palate. I usually keep mine simple and clean because the broth is already delicious! Happy Tuesday everyone!👋👋 It took me a long time to finally work up the courage to give this fruit, the stinky Durian, a try! 🥴😷😊 This fruit is interesting, in my opinion! At first when trying to get the shell/outer layer spiky skin to open, the fruit immediately released a pungent odor that is unbearably stinky…similar to a bad gas. However, after the whole fruit was opened and the inside flesh has been exposed, a sweet fragrant takes over the gassiness odor. This fruit is alive!😜🤨 What’s Even more interesting is when you start to eat the mushy flesh or insides you can taste all the notes of vanilla, floral, cinnamon, and egg. And the texture of the inside is like a egg-like custard for sure! And super sweet and different!!🥴 Would I try it again? I’d say probably not! Maybe not by myself. This thing is expensive and I couldn’t finish it in one day and the next day it started to deteriorate/rot! Extremely perishable, though…! I would recommend that if you’ve never had it before and would like to try it, have someone else do it with you. That way you’re not wasting it like I did!! Why? Greetings everyone!👋👋 In this extremely cold weather, it’s a perfect day to have a hearty vegetable soup to warm up the soul. This is a vegetables and yes, no meat needed, and it’s still a heart and delicious soup! 😊👍 This soup must have over a dozen types of vegetables! The most important thing to have when making a hearty and delicious vegetable soup is using rooted vegetables. In this dish, the rooted vegetables are rutabaga, parsnips, orange beets, and fennel bulk/roots - they are the base for flavors, and provide a meaty soup. The next vegetables in line are the aromatics , which will be bringing flavor and taste - carrots, celery, onions, garlic, and mushrooms. For green color I used kale leaves, and sweet peas. Lastly, the vegetable proteins consist of green split peas, cooked chickpeas, and canned cannoli beans. The herbs are parsley leaves, and bay leaves (2). Lastly , seasoning is salt, gr peppercorns and then vegetable or chicken stock, or water.
