Beanball Croquettes
Ingredients
100g Green lentil bean
1000ml water
2 tablespoon salted butter
1 teaspoon black pepper
(Starch water) 2 teaspoons starch flour mixed with 2 tablespoons water
1 egg
50g flour
30~50g breadcrumbs
1. Rinse the lentil bean. In a pot, add 100g bean and 1000ml water. Cook with low-medium heat and simmer until softened and water is all reduced.
2. Add salted butter and pepper. Stir well. Add starch water. Stir well and it should become sticky as a paste. Let it cool.
3. Shape into balls.
4. Prepare 1 plate of plain flour, 1 plate of egg wash, 1 plate of breadcrumbs. Coat the patties with the following sequences: flour, egg, breadcrumbs
5. In a pot, Heat the oil to 170C. Deep fry until golden brown. Remove and drain on a rack
6. Heat the oil to 230C and deep fry the beanballs again for 30sec. Rest it on a rack.

Mashed potato (upper right hand corner)
1 small potato
1 teaspoon cream
1 teaspoon butter
A pinch of salt and pepper
1. Steam the potato until softened. Mash it with a folk. Mix it with 1 tablespoon cream and a pinch of salt and pepper.
2. Decorate with 3 corns :)
Mother and Child Rice Bowl --------- one of Noctis's favorites and also mine! -------
ingredients
100g Chicken Drumstick Meat (Season with 1tablespoon soya sauce and 1 teaspoon wine)
½ onion (thinly-sliced)
3 eggs
1 teaspoon olive oil (add to heated skillet)
2 tablespoon soya sauce
1 teaspoon wine
50ml water
1. Season the chicken meat with 1 tablespoon soya sauce and 1 teaspoon wine for 2 hours.
2. Crack the eggs into a bowl. Use a fork to beat them together well.
3. Put a skillet over a low-medium heat. Add 1 teaspoon olive oil and cook the onions until softened.
4. Add chicken meat and fry until golden brown. Add 50ml water, 2 tablespoon soya sauce, 1 teaspoon wine and cook for further 5 minutes.
5. When the sauce in the skillet is largely reduced, turn off the heat (important!). Add the eggs and stir gently. The heat of the skillet will continue to cook the eggs to perfection.

Ingredients:
800g pork belly
4 bunches spring onions
4 garlics (do not peel)
1/2 cup Chinese rock sugar (crystal sugar) (break it to small pieces)
2/3 cup hot water
1/3 cup light soy sauce
1 cup cooking wine
1 tablespoon peanut butter
1) Rinse pork belly. Season pork belly with 2/3 cup light soy sauce (skin down)
2) Add 1/2 cup Chinese rock sugar in a pot, melt it with low heat. Once it melts completely and turns brown, add 2/3 cup hot water. Put the syrup aside for later usage. (watch out for the hot syrup!)
3) Put pork belly in a hot skillet (skin down first). Then turn it and get both side golden brown.
4) Rinse the pork belly with cold water. Cut it into several 2cm-cubes.
5) Add spring onions into a large skillet. Put the pork belly on top of the spring onions and add garlics. Pour 1 cup cooking wine, 1/3cup light soy sauce, 2pieces of rock sugar (1cm cube each), 1 tablespoon peanut butter and the syrup in step 2. Cook with medium-high heat for 5 mins.
6) Pour the pork and sauce to an ovenproof bowl. Cover it with aluminum foil. Steam it for 2 hours. (add water occasionally in the outer part of the steamer).
7) Ready to serve!
Tips: do not add water to the pork belly and sauce. If it is too salty, add more wine or sugar.

Longwythe's Peak (Roast beef)
It's super big!!!!! Glad that I was managed to make it medium-rare!

I tried to combine the Asian and American style when cooking this roast beef.
Ingredients:
700g beef eye of round roast
50ml soy sauce
1 tablespoon sugar
1 table spoon wine
1 teaspoon black pepper
1 Onions (cut to wedges)
3 gloves garlic (keep the garlic skin)
1. Season the beef with soy sauce, sugar, wine, pepper. Rest for 1 night.
2. Preheat oven to 230C. Put onions and garlic into a roasting tin and sit the beef on top.
3. Roast in oven for 15~20mins for medium rare.
4. Remove from oven, cover with foil and let rest for 15 mins before cutting

ingredients:
1 chicken leg meat (150g) (seasoned with salt and pepper)
5 shrimps
½ squid
1/2 red bell pepper (sliced)
2 cup rice
1 cup (250ml) chicken stock
1 and ½ cup water (375ml)
2 garlic cloves, chopped
½ onion, chopped
1 teaspoon white wine
1 teaspoon butter
1 teaspoon parsley
A pinch of pepper
½ teaspoon yellow ginger powder/ ¼ teaspoon saffron powder
------
1. Rinse all the seafood and chicken
2. On a skillet over medium heat, melt butter, fry onions and garlic until fragrant.
3. Add rice and stir fry for 3 minutes. Add chicken stock, water, wine, pepper, parsley, yellow ginger powder or saffron powder. Stir well. Cover and simmer for 15 minutes.
4. Check if the rice is almost cooked (soft). If the rice is still hard, add 50ml water and further simmer for 5-10minutes.
5. Put all the seafood, chicken, sliced red bell pepper on top of rice. Cover and simmer for further 10 minutes. Check all the seafood and rice are cooked thoroughly. Enjoy! Tips: saffron powder is quite expensive. It can be replaced by yellow ginger powder for the yellow color
FF15 Lasagna al Forno
Ingredients (for 2 persons)
A) Dry lasagna sheets 4
B) meat sauce
150-200g lean ground beef
1/2 onion, diced
1 tomato, diced
1/2 carrot, diced
2 cloves garlic, minced
1 teaspoon butter
1 teaspoon white wine
1 tablespoon tomato paste
3 tablespoons ketchup
1 tablespoon sugar
salt and ground black pepper to taste
250ml chicken broth
1 bay leaf
1 teaspoon parsley
Mozzarella cheese 60-70g
C) veggies on top
eggplant
cucumber
asparagus
mushroom
1) Heat the butter in a large skillet over low-medium heat. Add the onions, minced garlic. Cook and stir, for 10 minutes, until the onions are wilted.
2) Add tomato, carrot, chicken broth, bay leaf , parsley ,tomato paste , white wine, ketchup , beef, cook until it is mostly reduced, about 20 minutes.
3) Add sugar, salt and ground black pepper to taste
4) Preheat the oven temperature to 200C
5) To build your lasagna, put a lasagna sheet into a large deep ovenproof dish. Spoon the meat sauce onto the lasagna sheet, making sure the sheet is completely covered with the sauce in one layer. Sprinkle the cheese over the sauce. Repeat this 2 times, finishing with a layer of cheese. Bake the lasagna in the oven for 40 minutes or until golden and bubbling.
6) In a clean skillet, heat 1 teaspoon of olive oil, fry the eggplant, cucumber, asparagus, mushroom until they turn golden brown. Put them onto the lasagna.
