Let's make some soup
Every so often, coming out of an attack I get the lovely urge to cook. But usually first foods are not items I keep around the house so I am left to improvise.
Its been approx 30hrs since I've had real food. I had a single egg this morning but that's it really.
I need something vitamin and nutrient packed so that should eating make me feel worse, I will at least have gotten some essentials. What does this mean? Veggies.
Cooked in a way that releases their nutritional goodness without straining my digestive system. Best options: soup.
So, today I'm making an improved soup based on what my body wanted at the store. I seriously took my happy ass to the grocer and let my body tell me which veggies it wanted.
I ended up with freaking mushrooms. I HATE mushrooms. But the body said 'use them for flavor in the stock and then pull em' so that's what I am gonna do!
Here is everything being used. Note the meat and dashi packet I already had on hand.
So I chopped everything up to the sizes I needed and followed the instructions for making dashi broth.
Alright. Now its time to start.
I sauteed the green beans and carrots first, then threw in 50ml of Sake (body said 'do it for the flavor') and let it cook until the alcohol was out. Tossed in the meat, 3c dashi, and turned the heat down to low. Tossed in mushrooms.
Let the soup rest on low heat for approx 20min. Now to make the soba! (Follow your package instructions!)
By the time your noodles are done, your soup will likely be too. Check if carrots are done. Remove any scum, and mushrooms from the top.
Prepare your bowl. Scoop out soup first, then add noodle directly to bowl. Top with green onion.
Fun fact: my dashi got a little diluted in the process (i didnt use enough packets!) So I ended up adding miso to make the flavor stronger.
My day was packed yesterday with classes, exams, and homework. I got so caught up I forgot to eat till 1 in the morning! 1 in the morning! I can’t believe I forgot to eat lmao
My first meal in Cancun was a local homecooked meal: chicken soup with potato and carrot which tasted great with lime and mole poblano con pollo aka chicken with a very special demi-glace sauce made of chocolate and banana eaten together with tomato rice! Apparently, this is a very original Mexican dish. Thought chocolate curry only existed in Honey and Clover lol 😂. It had a slight bittersweet taste of chocolate and along with a combination of salty and spicy taste which made this dish very interesting. Dessert: biscuits topped with goat milk caramel. 🐐 In conclusion, possibly the most tasteful meal I've ever had
