This Myanmar-inspired noodle salad combines the flavors of fish sauce, roasted pork, and a tangy dressing for a refreshing and satisfying dish.
Ingredients: 200g rice noodles. 200g roasted pork, thinly sliced. 2 tbsp fish sauce. 1 tbsp soy sauce. 1 tbsp lime juice. 2 cloves garlic, minced. 1 red chili, finely chopped. 1/4 cup peanuts, crushed. 1/4 cup fresh cilantro, chopped. 1/4 cup green onions, sliced. 1/4 cup bean sprouts. 1/4 cup cucumber, julienned.
Instructions: Follow the directions on the package to cook the rice noodles. Run cold water over the drain and rinse. Put away. Put lime juice, minced garlic, chopped chili, fish sauce, and soy sauce in a small bowl. Mix them together to make the dressing. Put the cooked rice noodles, sliced roasted pork, crushed peanuts, chopped cilantro, sliced green onions, bean sprouts, and julienned cucumber in a large bowl. Add the dressing to the noodles and toss everything together until it's well covered. Serve right away, and if you want, top with extra cilantro and peanuts.
