Ingredients: 8 oz rice noodles. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 1/2 cucumber, thinly sliced. 1/4 cup chopped cilantro. 1/4 cup chopped green onions. 1/4 cup peanuts, chopped. 1/4 cup gluten-free soy sauce. 2 tablespoons sesame oil. 2 tablespoons rice vinegar. 1 tablespoon maple syrup. 1 tablespoon sriracha sauce. 1 clove garlic, minced. 1 teaspoon grated ginger.
Instructions: Follow the directions on the package to cook the rice noodles. Run cold water over the drain and rinse. The cooked noodles, red bell pepper, carrot, cucumber, cilantro, green onions, and peanuts should all be put in a large bowl together. Mix gluten-free soy sauce, sesame oil, rice vinegar, maple syrup, sriracha sauce, garlic, and ginger in a small bowl with a whisk. Add the dressing to the noodles and toss to coat everything well.
