I had turkey left over from the one that I cooked to make turkey sandwiches so I made turkey pot pies in my large muffin pan. I love cooking them in there because all the sides, the top, and the bottom get very crispy, and they're delicious 😋 I made pastry dough and picked all the meat that I could get off of the turkey. I made a roux and added sautéed onions, green peppers, celery, and minced garlic and peas and corn to the roux. I sautéed the turkey to give it more flavor and added it to the mixture. It was creamy and bubbly, and it was very tasty. I rolled out balls of dough and lined the muffin pan with them. I filled those with the turkey and vegetable mixture and then folded the dough over the top. I brushed the tops with an egg wash and baked them in a 450° oven for 25 minutes. They came out great!! The dough was crispy, tender, and flaky, and the filling was divine. I only ate one, but I wanted to eat more. With something so rich, I had to exercise portion control. It was not easy to do that so I had one for breakfast the next day. 😁🤣😋 I popped them back in the muffin pan and heated them up that way so the crust would retain its crispy, delightful nature.
