DIM CHIRA BHAJA So, this is fried flattened rice with eggs. As I am a overdosed with sweet tooth my brother, on the other hand is a die hard snacks and salty dish lover. So, to make us have #flattenedrice when we were a kid she found two special recipes. One as I have already mentioned earlier #chirapulao for me and #dimchirabhaja for my brother. Mothers are magical. They know how to feed their kids and have enough patience to make them feed with their choice of dishes. Thus, they discover new and yummilicious dishes in their kitchen. Some recipes they might forget (as those dishes might not worked on) but some are always close to the heart. This is easy to prepare, tasty and healthy. . . Here, goes the #recipe : ▪Wash and keep aside 2cups flattened rice mixed with 1tsp salt and 1tsp sugar. ▪Take a pan, put 1tsp oil, break 2 eggs, put 1/2 tsp salt and 1/4tsp turmeric powder. Fry an omelette. Keep aside. ▪In the same pan, heat 2tbsp #refinedoil or #ghee and add 1 medium chopped #onion . Add 1 tsp salt and 1tap turmeric powder. Fry till the onion looks transparent. ▪Add 1 medium chopped #potato . Fry till it looks crispy. ▪Add 1/2 cup boiled #greenpeas . Stir and mix well. ▪Finally add flattened rice and the #omelette by cutting into small pieces. ▪Mix everything well and before adding the flattened rice make sure the veggies are fried well. ▪Plate it and garnish with tomato sauce. . . TIPS: 1. You can add any veggies of your choice. 2. You can also add #garammasalapowder or #maggimasala to enhance the flavour. 3. #corianderleaves or any #herbs too does wonder in this snacks. CHIRA'r PULAO When I was a kid and even when big girl I was not fond of #flattenedrice . I used to have it only if mumma prepared #chirapulao where I could find more of raisins and cashews. Sometimes in the name of tradition I used to have it just a little. Flattened rice is an important item in #bengaliculture #assameseculture in fact in ever #indianculture it plays a vital role. It is healthy and is of various kinds. So, #chira #pulao is prepared with the medium thick quality that one could easily find in #assam . So, being from #northeastern #india I had witnessed various qualities of #sira in my state. But we did not had the lightest quality one. So, I grew up eating the medium thick quality most of the time as it was common at every household. Now, when I am at Delhi I am happy to find the lightest quality too. ☺ . . Recipe: ☆Take 2 cups of #flattenedrice . Soak in #water , take out in a strainer and mix with 1tsp #salt and 1tsp #sugar for 10 mins. ☆Meanwhile, fry 1/3 cup #peanuts and 1/3 cup #greenpeas in 1 tbsp of #clarifiedbutter . ☆Take the fried #dryfruits out of the pan and keep aside. ☆After 10 mins of soaking the flattened rice get ready to prepare it. In a pan add 2 tbsp clarified butter, 1 tsp yellow #mustardseeds . #When the mustard seeds starts fluttering add 1/3 cup #raisins (washed and dried well) . Stir fry for 5 sec. ☆Add the flattened rice, fried peanuts and peas. Mix everything well and make sure the flattened rice do not gets lump. ☆Add a pinch of #turmeric, salt according to taste and 1 tbsp of sugar. ☆Keep stirring till everything mixes well. ☆Switch of the stove and add 1/2 cup chopped #corrianderleaves . AVAL ETHAPAZHAM It's never late to post anniversary delights. 😆 So, we have complete our 3rd year on 28th April, 2020. Being locked down, this year we could be accomplish our plan. So, I thought of making it special at home to sustain the #quarantainelife . . . Woke up with positive vibes and started my day with a mind full of plans. Break the fast with this traditional dish, #avalethapazham , from Kerela, India. It's a quick and healthy recipe for the #breakfast . Now, #aval means #flattenedrice and #ethapazham means #banana in #malayala . . . Here, goes the #recipe : • Put 1/2 a cup #jaggery (i.e. #gur ) in a pan. • When it starts melting add 1/2 cup crushed coconut. • Mix well and then add 2 cups of flattened rice (i.e. aval or #chira ) • Keep mixing till jaggery and flattened rice mixes well. • Add a little #milk or #water so that the mixture doesn't dry out. • Add 1/2 cup of chopped banana. • Just when everything is mixed well add 1/2 cup broken #cashews and 1 tsp of crushed #cardamom . • Plate it and garnish with chopped bananas.
