Ingredients: 4 fillets of white fish such as cod or tilapia. 12 large shrimp, peeled and deveined. 12 sea scallops. 1 cup cherry tomatoes, halved. 1 red bell pepper, thinly sliced. 1/4 cup chopped cilantro. 4 cloves garlic, minced. 2 limes, sliced. 4 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat the oven to 400F 200C. Cut four large squares of aluminum foil, big enough to wrap around each seafood packet. Divide the fish fillets, shrimp, and scallops evenly among the foil squares. Evenly distribute the cherry tomatoes, bell pepper slices, cilantro, minced garlic, and lime slices over the seafood. Drizzle each packet with 1 tablespoon of olive oil. Season with salt and pepper to taste. Fold the foil over the seafood to create a packet, ensuring it's sealed tightly. Place the packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the seafood is cooked through and flakes easily with a fork. Carefully open the packets and serve the seafood hot, garnished with additional cilantro and lime wedges if desired.
