Ingredients: 2 large eggs. 2 tablespoons cooked chicken, diced. 2 tablespoons shredded cheddar cheese. 1 tablespoon buffalo sauce. Salt and pepper to taste. 1 teaspoon olive oil. Chopped green onions for garnish.
Instructions: Preheat your oven to 350F 175C. In a bowl, beat the eggs and season with salt and pepper. Heat olive oil in an ovenproof skillet over medium heat. Add the diced chicken to the skillet and saut for 1-2 minutes until heated through. Pour the beaten eggs over the chicken in the skillet. Let the eggs cook for about 2 minutes, gently lifting the edges with a spatula to allow the uncooked eggs to flow to the bottom. Sprinkle shredded cheddar cheese evenly over the frittata. Drizzle buffalo sauce over the cheese. Transfer the skillet to the preheated oven and bake for 8-10 minutes or until the frittata is set and slightly golden on top. Remove from the oven and let it cool for a minute. Garnish with chopped green onions and an extra drizzle of buffalo sauce if desired.
