Mario Batali's Eggs in Hell is a quick and delicious meal made with simple ingredients you likely already have in your pantry. The eggs are poached in a spicy tomato sauce, creating a flavorful and satisfying dish that's perfect for breakfast, brunch, or dinner.
Ingredients: 4 large eggs. 1 can 14 oz crushed tomatoes. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon olive oil. 1/2 teaspoon red pepper flakes adjust to taste. Salt and pepper to taste. Fresh basil leaves for garnish optional.
Instructions: Set a pan on medium heat and add the olive oil. Put the chopped onions and garlic in the pan and cook them until they turn clear. Add the crushed tomatoes and red pepper flakes, and then add salt and pepper to taste. Let the tomato sauce cook slowly for 10 minutes, or until it gets a little thicker. Put an egg into each of the four small holes you made in the sauce. Put the lid on the pan and cook for 5 to 7 minutes, or until the egg whites are set but the yolks are still creamy. If you want, you can add fresh basil leaves as a garnish. Enjoy while hot!
