Assam — Tea, Thalis, River Fish

Begin in Guwahati, then Jorhat and Majuli. Build your plate around an Assamese thali: khar, masor tenga (tangy fish), pitika sides, and winter duck with sesame. Dawn jolpan breakfasts and tea-garden walks set the tone. Markets: Fancy Bazar and neighborhood haats.

Meghalaya — Monsoon Comforts

Khasi and Jaintia flavors star in jadoh (red rice with pork) and dohneiiong (pork in black sesame). Know your ferments: tungtap = fermented fish chutney; tungrymbai = fermented soybean, often cooked with pork. Street snacks: pumaloi (steamed rice cake), dohkhleh (pork salad). Base yourself in Shillong; day trips to Cherrapunji and Mawlynnong.

Nagaland — Smoke, Bamboo, Heat

Tripura — Tangy Bamboo and Sweet Finishes

Use terms carefully: Mui Borok refers to Tripuri cuisine overall. For bamboo-shoot prep, look for chakhwi (muya bai), often cooked with vegetables or meat. Add bamboo-shoot pickle, hand-pounded rice snacks, and chaler pitha to round out the plate. Agartala carts and the Ujjayanta Palace area are easy tasting grounds.

When to go, how to plan

Season: October–March for dry roads and long food walks. Monsoon (June–September) is lush but can slow travel.
