I just mowed a Morel mushroom and then found 2 more!!! Lunchy munchy! Yum yum! Another edible mushroom I’ve now identified and tried to add to my list. My count stands now at 15 (I think) which started with a humble giant puffball mushroom. About half of my finds were found in my own garden. Like most folks, it’s frugal January where tax bills loom for those of us self-employed and where lots of us are feeling the pinch of the new year. I quite like making the pennies go a bit further and so today I made some delicious broccoli, kale and Stilton soup using the left over Christmas cheese and chicken stock I made from a leftover roast carcass. It was pretty yummy and so much better than store-bought. And even though it’s January, nature is still giving with plentiful supplies of oyster mushrooms and velvet shank mushrooms that I had for breakfast. Reading a brilliant article in The Guardian today describing how ancient mycelium rings may be the key to climate change acting as huge carbon sinks and how if the trees are the Earth’s lungs, then fungi mycelium is the essential circulatory system, storing and distributing carbon where needed for plant growth. These gigantic areas hidden under the ground are now being mapped and will hopefully be given protection status from land development and agriculture. Rare picture of me so excited ticking one off my bucket list - finding chicken of the woods fungi. There are many commonly foraged mushrooms we just don’t find around here like ceps, oysters, chanterelles and I had never seen a chicken of the woods in real life before. But today we found some! Hurrah. Thankfully it wasn’t growing on a Yew Tree (that’s bad apparently) and as some people can be allergic, we’ve just cooked up a small amount in butter to test. It was delicious, absolutely amazing and yes, it tastes like chicken!
