Ful Medames
Ful medames for a foul weather day - for sure. The wind has been howling around the corners of my house all night and into this morning with rain falling sideways which calls for a hot, filling meal to chase the chill away. This fixes up quickly and just takes a little tomato chopping to get the job done. If you’re out of whole tomatoes substitute cherry tomatoes halved. See what you think...
1 c. dry fava beans
3 c. water
1 - 14.5 oz. can garbanzo beans, drained
1 t. cumin
2 lemons, fine grated rind, juiced
1/2 t. kosher salt
1/2 c. oil
1 tomato, diced
1/4 c. dried parsley
4 t. garlic, minced
dash salt/pepper
slight dash red pepper flakes
In a soup pot, add dried fava beans and water. Cover and bring to a boil. Turn down to simmer, adding garbanzo beans, cumin, lemon grated and juice, kosher salt, oil, tomato, parsley, garlic, salt, pepper, and red pepper flakes. Let simmer 1 1/2 - 2 hrs. until fava beans are tender. Ladle up and enjoy...
