Ingredients: 6 large eggs. 1/2 cup shredded cheese. 1/4 cup diced ham or cooked bacon. 1/4 cup diced bell peppers. 1/4 cup diced onions. 1/4 cup diced spinach. Salt and pepper to taste. Non-stick cooking spray.
Instructions: Eggs, cheese, ham or bacon, bell peppers, onions, spinach, salt, and pepper should all be mixed together in a large bowl using a whisk. Coat the inserts of the slow cooker with cooking spray that doesn't stick. Fill each insert about three quarters of the way to the top with egg mixture. Put the lid on top and set the heat to low. Leave it alone for two to three hours, or until the egg bites are set. Let the food cool a bit in the slow cooker before taking it out. You can serve it right away or put it in the fridge to use later.
