Quick prince squash risotto:
Chop your pealed prince squash into bite sized chunks and roast with some olive oil and fresh parsley at 180degrees (fan oven) for 30-45 minutes, until the squash is soft and starting to turn golden.
Dice your leek and cook over a low heat with a drizzle of olive oil for around 10-15 minutes, or until the leek begin to soften and turn golden. Cover the pot whilst cooking.
Add risotto rice and stir for a minute allowing the rice to heat up.
Next cover the rice with a good amount of coconut milk and cover the pot. Leave to simmer stirring occasionally and adding more milk as you go along, until the rice is cooked well. The duration of this will depend on the type of rice you use. This will also work with brown rice, black rice, basically any kind of rice.
Once the rice is cooked, stir in your roasted squash and leave to simmer for a few more minutes to allow the flavors to mix.
Remove the dish from the heat.
Add a handful of spinach and stir in, covering the pot for a minute or so to allow the spinach to wilt.

As for measurements I used -
Half a squash
Few stalks fresh parsley
1 leek
150g of rice
400mls of coconut milk (I used carton milk not canned)
Handful of spinach
Pad Kra Pao with Egg
MIDWEEK MEALS - Serves 2
One of the easiest and quickest stir fries any man can whip up. With a few main ingredients and condiments you’ll already have stacked up in your pantry, a spare 30 minutes and some guy name Bob is your uncle.
INGREDIENTS
500g mince pork, beef, or chicken (You can do what I do here which is chop up 500g of skinless chicken breasts with a cleaver. You get better texture that way.)
3 large cloves of garlic, peeled
5 bird’s eye chilies (or however many you can tolerate)
1 large French shallot, peeled and roughly chopped
2 tbsp vegetable oil
1 tbsp fish sauce
2 tbsp thin/light soy sauce
1 tbsp brown sugar
1 tbsp dark sweet soy sauce (kecap manis)
1 tbsp oyster sauce
1 cup holy basil leaves( or Thai basil if you can’t find holy basil)
METHOD
In a mortar, pound together the garlic, chilies, and shallot until you get a coarse paste.
Heat up pan and add vegetable oil over medium-high heat. Add the paste to it and fry until fragrant.
Add the meat to the skillet and break it up with the spatula into small pieces.
Add the remaining ingredients (except the basil leaves), correcting seasoning as needed.
Once the meat is cooked through, check the amount of liquid in the pan. If it’s too dry, add a little bit of water or sodium-free broth.
Before taking the pan off the heat, add the basil leaves to the mixture and give it a couple of stirs. We only want to wilt the basil with the residual heat that is still in the pan so as not to mute the fragrance of the fresh holy basil leaves.
Serve over rice. A Thai-style crispy fried egg on top. Enjoy
This simple but tasty vegan roasted tomato pasta dish has the sweetness of roasted cherry tomatoes, the smell of garlic, and the taste of fresh basil. It's a quick and easy meal that's great for the middle of the week.
Ingredients: 500g cherry tomatoes, halved. 4 cloves garlic, minced. 2 tbsp olive oil. Salt and pepper to taste. 300g pasta of choice e.g., spaghetti, penne. Fresh basil leaves, chopped, for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Add the cherry tomatoes that have been cut in half to a baking sheet. Add the minced garlic, olive oil, salt, and pepper. When the oven is hot, put the tomatoes in it and roast them for 20 to 25 minutes, or until they are soft and slightly caramelized. Follow the directions on the package to cook the pasta until it's al dente while the tomatoes are roasting. Remove the water and set it aside. Take the tomatoes out of the oven when they're done and mix them with the cooked pasta. Add chopped fresh basil leaves to the top of the pasta. Feel free to serve the vegan roasted tomato pasta hot and enjoy!
