Ingredients: 1 cup rolled oats. 1 cup whole wheat flour. 1/2 cup almond butter. 1/4 cup honey. 1 ripe banana, mashed. 1/2 cup unsweetened applesauce. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup chopped nuts e.g., walnuts, almonds. 1/4 cup dried cranberries or raisins. 1/4 cup dark chocolate chips optional.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put the whole wheat flour, baking soda, ground cinnamon, rolled oats, and salt in a large bowl. Put the honey, mashed banana, almond butter, and plain applesauce in a different bowl and mix them together. Add the dry ingredients to the wet ones and mix them together until everything is well mixed. You can add dark chocolate chips, chopped nuts, or raisins and dried cranberries if you want. Make small balls of cookie dough with your hands and put them on the baking sheet that has been prepared. To make a cookie shape, press down on each ball with the back of a spoon or a fork. After the oven is hot, bake the cookies for 12 to 15 minutes, or until they turn golden brown. Take the cookies out of the oven and leave them on the baking sheet for five minutes to cool down. Move the cookies to a wire rack to cool all the way down. With milk or your favorite morning drink, these Good Morning Sunshine Breakfast Cookies are a healthy way to start the day.
