Ingredients: 4 lobster tails, shells removed and meat chopped. 1/2 cup mayonnaise. 2 tablespoons unsalted butter, melted. 1 tablespoon lemon juice. 1 teaspoon Dijon mustard. 1/4 teaspoon Old Bay seasoning. Salt and pepper to taste. 4 split-top hot dog buns. 2 tablespoons chopped fresh parsley. 1 tablespoon chives, finely chopped.
Instructions: Chop up the lobster meat and put it in a bowl. Add the mayonnaise, melted butter, lemon juice, Dijon mustard, Old Bay seasoning, salt, and pepper. Put a trivet in the Instant Pot and add one cup of water. Make a hole in the middle of each hot dog bun and put one on a trivet inside the Instant Pot. Put the lid on top and set it to sealing. Cook for 3 minutes on high pressure. When you're done, quickly let go of the pressure and carefully open the lid. Before you serve the lobster rolls, sprinkle them with chopped parsley and chives.
