Celebrate the colors of the French flag with these delicious and patriotic macarons. Perfect for any French-themed event or simply to enjoy a taste of France.
Ingredients: 200g almond flour. 200g powdered sugar. 150g granulated sugar. 75ml water. 150g egg whites aged. Red gel food coloring. Blue gel food coloring. White gel food coloring.
Instructions: Prepare a baking sheet lined with parchment paper. Sift together almond flour and powdered sugar. Divide into three equal parts. In a saucepan, combine granulated sugar and water. Heat to 118C 244F. While the sugar syrup is heating, whip 50g of egg whites until soft peaks form. Once the sugar syrup reaches 118C, slowly pour it into the whipped egg whites while continuing to whip. Continue whipping until the meringue cools to room temperature and becomes glossy. Divide the meringue into three equal parts. Fold one part of the meringue into the first portion of almond flour and sugar mixture until smooth. Add white food coloring. Fold another part of the meringue into the second portion of almond flour and sugar mixture. Add blue food coloring. Fold the remaining meringue into the third portion of almond flour and sugar mixture. Add red food coloring. Transfer each colored batter into separate piping bags with a round tip. Pipe small circles onto the prepared baking sheet, alternating colors to create a tri-color effect. Tap the baking sheet on the counter to remove air bubbles and let the macarons rest for 30 minutes. Preheat the oven to 150C 300F. Bake the macarons for 15-18 minutes until they have risen and have firm shells. Allow them to cool completely on the baking sheet. Once cooled, sandwich the macarons together with your choice of filling e.g., buttercream or ganache. Serve and enjoy your Macarons bleu, blanc et rouge!
