These vegan and gluten-free monster cookies are a healthier version of the classic treat. Made with natural peanut butter, maple syrup, and almond flour, they're delicious and satisfying.
Ingredients: 1/2 cup natural peanut butter. 1/4 cup maple syrup. 1/4 cup coconut sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1/2 cup almond flour. 1/2 cup gluten-free rolled oats. 1/4 cup vegan chocolate chips. 1/4 cup chopped nuts optional.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, mix together the peanut butter, maple syrup, coconut sugar, applesauce, and vanilla extract until smooth. Add the almond flour, rolled oats, chocolate chips, and chopped nuts if using to the bowl and mix until well combined. Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them apart. Use a fork to flatten each cookie slightly and create a crisscross pattern on top. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
