A tasty and speedy tofu stir-fry that is full of vibrant veggies and savory spices. Ideal for a tasty and wholesome weeknight supper.
Ingredients: 1 block firm tofu, pressed and cubed. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon cornstarch. 1 tablespoon vegetable oil. 1 bell pepper, sliced. 1 cup broccoli florets. 1 carrot, sliced. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 2 green onions, chopped. Sesame seeds for garnish. Cooked rice for serving.
Instructions: Tofu cubes should be evenly coated after being combined with soy sauce, sesame oil, and cornstarch in a bowl. In a big skillet, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook for 5 to 7 minutes, or until golden brown on all sides. Take out of the skillet and place aside. Add bell pepper, broccoli, and carrot to the same skillet, and add a little more oil if necessary. Cook the vegetables for 45 minutes, or until they are crisp-tender. Add the ginger and garlic powder, and cook for an additional minute. Return the cooked tofu and chopped green onions to the skillet. After combining everything, cook for an additional two minutes. Serve hot with sesame seeds as a garnish over cooked rice.
