Pineapple Orange Swirl Cheesecake Recipe
Enjoy this delicious raw, paleo-friendly dessert called Easy Vegan Raspberry Cheesecake. It's creamy, tangy, and full of the flavor of fresh raspberries. This dish is great for any event and will impress both vegans and non-vegans.
Ingredients: 2 cups raw cashews, soaked overnight. 1 cup coconut cream. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. Juice of 1 lemon. 1 1/2 cups fresh raspberries. 1 cup Medjool dates, pitted. 1/2 cup almonds. 1/2 cup shredded coconut. Pinch of salt.
Instructions: In a food processor, blend together dates, almonds, shredded coconut, and a pinch of salt until a sticky crust forms. Press the crust mixture firmly into the bottom of a lined cake pan to form an even layer. Place in the freezer while preparing the filling. Drain soaked cashews and add them to a blender along with coconut cream, maple syrup, melted coconut oil, vanilla extract, and lemon juice. Blend until smooth and creamy. Pour half of the filling mixture over the prepared crust. Add raspberries to the remaining filling mixture in the blender and blend until smooth. Pour the raspberry filling over the first layer of filling in the cake pan. Use a knife or toothpick to create swirls in the filling for a marbled effect. Place the cheesecake in the freezer for at least 4 hours or until set. Once set, remove from the freezer and let it sit at room temperature for a few minutes before slicing and serving. Garnish with fresh raspberries if desired.

Instructions: In a food processor, blend dates and walnuts until finely chopped. Press mixture firmly into the bottom of a lined cake pan to form the crust. In a blender, combine soaked cashews, coconut oil, maple syrup, and lemon juice. Blend until smooth and creamy. Pour half of the cashew mixture onto the crust. Add ripe banana to the remaining cashew mixture in the blender. Blend until smooth. Pour the banana mixture over the first layer in the cake pan. Drop spoonfuls of sliced strawberries onto the banana layer. Using a knife, gently swirl the strawberries into the banana layer to create a marble effect. Place the cheesecake in the freezer for at least 4 hours to set. Once set, remove from the freezer, slice, and serve. Enjoy!
