My mom made these adorable little vegan fruit tarts for @sofie_squats birthday! I wanted to share the recipe with you all!❣️ . . Fresh Fruit Tarts . . Shortbread crust: • 1/2 cup confectioners sugar • 1 1/2 cup all purpose flour • 1 1/2 sticks Earth Balance vegan butter, softened & sliced . . Filling: • 1 (8oz) vegan cream cheese (Tofutti works best) • 6 Tbsp granulated sugar (or sweetener of choice) • 1 tsp vanilla extract . . • Fresh fruit for topping • Confectioners sugar for dusting . . Directions: 1. preheat oven to 350 F 2. For the crust: in a food processor combine shortbread crust ingredients and process until the mixture begins to form a ball. Roll walnut sized balls of dough (24 total), place in mini tart cups (mini cupcake tray will do) and press down. Bake for 10-12 minutes until very lightly browned. Set aside to cool. 3. For the filling: beat the cream cheese, sugar, and vanilla together until smooth. Spread about a teaspoon of mixture in each crust. 4. We are excited to share our first contribution to this month’s #ArchivesPotluck challenge: the Tart of Medlers from A Book of Fruits & Flovvers (London, 1653). The recipe reads:
Take medlers that be rotten, and stamp them, and set them upon a chafin-dish with coales, and beat in two yolks of eggs, boyling till it be somewhat thick, then season it with sugar, cinamon, and ginger, and lay it in paste.
Medlars are a fruit resembling a large rose hip that appear to be rotten when they are ready to eat. Their flavor and texture have been compared to apple butter.

These healthy breakfast fruit tarts that don't need to be baked are a tasty and good way to start the day. They are the perfect mix of creamy, fruity, and crunchy because they are full of Greek yogurt, fresh berries, and healthy oats. Plus they're easy and quick to make!
Ingredients: 1 cup Greek yogurt. 1/2 cup rolled oats. 2 tablespoons honey. 1 teaspoon vanilla extract. 1 cup mixed fresh berries strawberries, blueberries, raspberries. 1 banana, sliced. 1/4 cup chopped nuts e.g., almonds or walnuts. 1/4 cup shredded coconut. Fresh mint leaves for garnish.
Instructions: In a mixing bowl, combine the Greek yogurt, rolled oats, honey, and vanilla extract. Mix well until all ingredients are thoroughly combined. Divide the yogurt mixture evenly into small tart shells or individual serving bowls. Top the yogurt mixture with mixed fresh berries, banana slices, chopped nuts, and shredded coconut. Garnish each tart with fresh mint leaves. Refrigerate the tarts for at least 30 minutes to allow the flavors to meld together. Serve cold and enjoy your healthy no-bake breakfast fruit tarts!

These tasty waffle fruit tarts are a sweet and fruity take on regular waffles. They look nice and taste great as a breakfast or dessert.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon salt. 1 cup milk. 1/4 cup unsalted butter, melted. 1 large egg. 1 teaspoon vanilla extract. Assorted fresh fruits e.g., strawberries, blueberries, kiwi. Whipped cream optional. Honey or maple syrup optional.
Instructions: Put the flour, sugar, baking powder, and salt in a bowl and mix them together. Take out a different bowl and mix the milk, melted butter, egg, and vanilla extract with a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Warm up your waffle iron and grease it a little. Follow the maker's directions and pour the waffle batter onto the iron. Cook until golden brown and crisp. Take the waffle out of the pan and let it cool down a bit. After the waffle has cooled, cut it into pieces about the size of tarts. Put different kinds of fresh fruits on top of each waffle tart. If you want, you can put some whipped cream on top and drizzle honey or maple syrup over it. Serve right away and enjoy!

Sprinkle with optional toppings if desired. Serve immediately or refrigerate until ready to enjoy.
