This flavorful, gluten-free, and nutritious dish is cilantro-lime black bean shrimp rice. It's a filling supper for any occasion because of the fresh cilantro, tangy lime, and protein-dense black beans and shrimp.
Ingredients: 1 cup rice. 1 can black beans, drained and rinsed. 1 lb shrimp, peeled and deveined. 1 lime, juiced and zested. 1/4 cup chopped cilantro. 2 cloves garlic, minced. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the rice. Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for one minute, or until fragrant. Add the shrimp to the skillet and cook for 2 to 3 minutes on each side, or until they are pink and opaque. Add chopped cilantro, lime zest, cooked rice, black beans, and lime juice. Simmer for two minutes, or until thoroughly heated. To taste, add salt and pepper for seasoning. If desired, top with extra cilantro and lime wedges and serve hot.
