These Pecan Pie Bites are a delicious little bite-sized version of pecan pie. They're great for snacking or serving as small treats. They're sweet, nutty, and so tasty you can't stop eating them!
Ingredients: 1 cup pecans, chopped. 1/2 cup brown sugar. 1/4 cup maple syrup. 1 tablespoon butter, melted. 1 teaspoon vanilla extract. 1 egg, beaten. 1/4 teaspoon salt. 1 package refrigerated pie crusts 2 crusts.
Instructions: Warm the oven up to 175F 350C. Put chopped pecans, brown sugar, maple syrup, melted butter, vanilla extract, beaten egg, and salt in a bowl. Mix the ingredients together until they are well mixed. Use a cookie cutter to make small circles out of the rolled-out pie crusts. Each circle should be pressed into a mini muffin tin to make a tart shell. About three quarters of the way to the top of each tart shell, fill it with the pecan mixture. Heat the oven and put it in. Bake for 15 to 20 minutes, or until the crust is golden brown and the filling is set. Let it cool down before you serve it. Have fun!

Ingredients: 1 1/2 cups of chocolate cookie crumbs. 1/4 cup of unsalted butter, melted. 1 cup of heavy cream. 1/2 cup of semi-sweet chocolate chips. 1/4 cup of granulated sugar. 1 teaspoon of vanilla extract. 1/2 cup of whipped cream. Mini chocolate chips for garnish.
Instructions: Preheat your oven to 350F 175C. In a bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press the mixture into the bottom and up the sides of mini tart pans to form the crusts. Bake the crusts for about 10 minutes, then let them cool completely. In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove the saucepan from heat and add the semi-sweet chocolate chips. Stir until the chocolate is completely melted and the mixture is smooth. Stir in the granulated sugar and vanilla extract until well combined. Pour the chocolate mixture into the cooled tart crusts and refrigerate for at least 2 hours, or until set. Instructions: Preheat oven to 375F 190C. Using a sharp knife, cut the puff pastry sheet into small squares or rectangles. Place the puff pastry squares on a baking sheet lined with parchment paper. Spread a teaspoon of lemon curd onto each puff pastry square. Top each square with a few fresh raspberries. Bake in the preheated oven for 12-15 minutes, or until the pastry is puffed and golden brown. Remove from oven and let cool slightly. Dust with powdered sugar before serving.

These Mini Apple & Browned Butter Tarts are a delightful treat, combining the sweet-tartness of apples with the rich flavor of browned butter, all encased in flaky puff pastry.
Ingredients: 1 sheet of puff pastry. 2 apples, peeled and thinly sliced. 2 tablespoons brown sugar. 1 teaspoon cinnamon. 4 tablespoons unsalted butter. 1 tablespoon lemon juice. 1 egg, beaten for egg wash.
Instructions: Before you start cooking, heat the oven to 375F 190C. Follow the directions on the package to thaw the puff pastry. Over medium heat, melt the butter in a skillet. Let it sit for about 5 minutes, or until it turns golden brown and smells nutty. Watch out not to burn it. Blend the apples into thin slices and mix them with the browned butter, brown sugar, cinnamon, and lemon juice. For about 5 to 7 minutes, or until the apples are soft. With a round cutter, make circles out of the puff pastry that will fit into the mini muffin tin cups. Put the circles of dough into the muffin tin cups. Put some of the apple mixture into each empty pastry cup. Beat an egg and use it to brush the edges of the pastry. The pastry should be baked in a hot oven for 15 to 20 minutes, or until it is golden brown and crispy. Let the tarts cool down a bit before you serve them.
